Tasting Notes
Dark stewed fruits with a nice allspice aromatic quality. Palate is dense with nice heavy core. Moderate tannins, slightly “sweet” tasting, with a lingering spice.
Production Notes
De-stem with 70% stem removal via sorting then crush to bins. 24 hour cold soak with no bleed then 15 days on skins post fermentation. Aged in 33% new French Oak for 8 months.
